Pre-Freezing Phase (-40°C to -50°C)​

 

​The unit rapidly cools materials below their eutectic point using a high-efficiency refrigeration system. This flash-freezing creates uniform micro ice crystals, preserving cellular structure and preventing nutrient loss.

Primary Drying (Sublimation at ≤5 Pa)​

 

Shelves provide controlled conductive heat (0°C to 25°C) while the vacuum system maintains deep vacuum

Ice sublimates directly into vapor, captured by the -55°C condenser

90% moisture removal achieved in this phase

​​Secondary Drying (Desorption)​

 

Shelf temperature gradually rises to 30-40°C

Removes bound moisture through molecular desorption

Final product moisture content: <5%
