Preparation: Load fruit (≤10mm thickness) onto trays and position the temperature sensor.

Pre-Freezing: Place loaded trays onto the shelves. Critical to final product quality, you choose between slow freezing (for larger crystal structure) or rapid freezing (for smaller crystals), depending on your specific fruit and desired texture.

Vacuum & Sublimation: Seal the chamber, activate the cold trap refrigeration. Once the cold trap hits -80°C, initiate vacuum pumping. When pressure falls below 10 Pa, sublimation drying begins. We provide precise controls to manage shelf temperature below your product's critical eutectic point during this phase.

Desorption Drying: For final moisture removal, secondary drying parameters are carefully set, ensuring temperatures stay below the product's denaturation or decomposition point.

Completion: Water vapor is efficiently captured by the cold trap, resulting in perfectly dried, shelf-stable fruit.
