Passion fruit, scientifically known as passion fruit, is a tropical vine evergreen fruit tree, native to Brazil, now widely planted in tropical and subtropical regions. It is named for its fruit aroma, a collection of a variety of fruit flavor, known as "the king of fruit juice". Passion fruit is rich in nutrients, including vitamin C, vitamin E, protein, dietary fiber and a variety of trace elements, has a high nutritional value and medicinal value.

 

The processed products of passion fruit are very diverse, in addition to fresh juice, they can also be processed into jams, jellies, fruit wines and so on. The peel can be used to extract pectin and dietary fiber, the seeds can be used to refine essential oils, while the fruit, roots, stems and leaves can be used in pharmaceuticals.

The process of industrial extraction of passion fruit juice mainly includes the following steps:

 

Selection of raw materials: choose the right maturity of passion fruit, generally slightly wrinkled skin is preferred, so that the passion fruit flavor and rich juice.

Cleaning: Wash the passion fruit thoroughly to remove surface impurities and possible pesticide residues.

Crushing: The cleaned passion fruit is crushed in order to release the pulp and seeds.

Juicing: the crushed passion fruit is juiced either by mechanical squeezing or by using a juicer. More efficient juicing equipment may be used industrially to increase the juice yield.

Filtration: The extracted juice needs to be filtered to remove seeds and coarse fibers to obtain a pure juice. This step can be achieved by sieving or centrifugation.

Blending: As passion fruit juice is sour, it is usually blended with sugar or other sweeteners to meet consumer taste requirements.

Sterilization: In order to ensure the safety of the juice and extend the shelf life, the juice needs to be sterilized, and the commonly used methods are High Temperature Short Time Sterilization (HTST) or Ultra High Temperature (UHT) sterilization.

Packaging: The sterilized juice is packaged under aseptic conditions, usually using aseptic packaging materials to maintain the freshness and flavor of the juice.

Storage and transportation: Packaged juice should be stored and transported under suitable temperature and conditions to maintain its quality.
