Several factors need to be considered in the design and operation of liquid egg pasteurisation equipment, including the rate of heat transfer, the type of agitation, the appropriate operating temperature for the product, and the requirements of the heating and cooling source. FDA liquid egg products must be free of Salmonella, which usually means pasteurisation is required. One method is to place the liquid egg in a container and seal it, then heat it to 140°F to 155°F and hold it for a period of time, 30 minutes for unpasteurised liquid eggs and 3 to 4 minutes for previously pasteurised liquid eggs. Afterwards, the liquid eggs are rapidly cooled to less than 40°F.
In order to produce refrigerated pasteurised liquid whole eggs with an extended shelf life, the recommended pasteurisation schedule is designed to inactivate pathogens, taking into account post-process contamination and the survival of heat-resistant spoilage bacteria, which requires the product to be frozen. Heating liquid eggs to 60°C significantly reduces the number of viable bacteria, with a lesser effect on E. coli, while holding at 60°C for 30 minutes further reduces the number of viable bacteria and destroys E. coli, Salmonella and Staphylococcus.
